Autumn Apple Muffins
1/2 cup organic sugar or maple syrup or honey
1/4 cup butter, softened
1 cup milk (coconut or almond works as well here)
2 cups organic all purpose flour
1/2 tsp salt
2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp all spice
1/2 tsp nutmeg
1/4 tsp ginger
1 1/2 cups chopped apples (peeled or unpeeled, we prefer McIntosh!)
1/4 cup brown sugar
1 tsp cinnamon
1 tblsp chopped crystallized ginger (optional)
In a large bowl, mix together the egg and milk.
In a different bowl, mix together the rest of the ingredients except for the apples, then mix in the egg and milk.
Fold in the apples last and spoon into muffin tins, then top with about a spoonful of sugar and cinnamon topping.
Bake at 350 until a toothpick comes out clean, about 25 minutes!
