1 onion (chopped)
1 bay leaf
1 cup lentils
3 cups water
Salt (to taste)
Pepper (to taste)
In a large pot, sautee the onions in the olive oil on medium heat for several minutes, until they are translucent. Add lentils, carrots, bay leaf, salt, pepper, and your favorite spices (we prefer garlic powder).
Add water and bring the soup to a boil, then reduce to a simmer and cook until tender.
Lentils are a great source of fiber, and provide seven important minerals, B-vitamins, and protein.
